I present you a macaroni and cheese recipe. There must be about 10 million different versions of this comforting recipe but I’m sharing mine with you anyway.

When you need comfort food, there’s nothing more satisfying than macaroni and cheese.

Macaroni and cheese from Phrenssynnes


2 cups of dry macaroni

3 tablespoons of butter

4 tablespoons of flour

2 cups of milk

300 grams of sharp cheddar cheese

250 grams of cottage cheese

1/2 teaspoon of paprika (to add colour)

Breadcrumbs (enough to cover everything)

Shredded mozzarella cheese (enough to cover all)

Grated sharp cheddar
grated sharp cheddar


Cook the pasta in about 2 to 3 cups of water.  Drain.

Make a roux with the butter and flour and cook for 3 to 4 minutes.

Add the 2 cups of milk. Mix well with a whisk. Cook, for 10 minutes over medium heat.

Add the strong cheddar, cottage cheese and paprika. Simmer over low heat for about 5 minutes.

Add the cooked macaroni and mix well.

Place in a buttered or oiled ovenproof dish (Pyrex style).

Put breadcrumbs and mozzarella on top.

Bake for about 30 minutes or until the top is golden brown.

Serve with broccoli florets or a colourful salad.
