This week’s topic is my fabulous cheese muffin recipe.
I learned this recipe in a “family science” class! This is what one of my high school courses was called. I learned to sew, but don’t worry, I will never write about it. My sewing skills are, to be polite, horrible.
The teacher had us make this muffin recipe to learn how to measure 7/8 of a cup without having a cup measuring eighths! Since then, I’ve bought myself this tool: an ounce-measuring cup. Also, it’s practical because the lines and measurement signs don’t fade.
Back then, I found that the best cheese for this recipe was “boring” Velveeta! Over the years, I’ve noticed that the texture of this cheese is different. It’s now very difficult to grate because it’s too soft. I experimented with other products and now I use extra-strong cheddar whatever the brand. We have so many good Quebec cheeses.



My brother’s favourite cheese muffin recipe
My brother loves these muffins and asks for them whenever I have a family brunch.
It has to be said that this is a savoury recipe, which is perhaps why Lhom does not love them. It’s not sweet, even though it’s called a muffin.
We could call them cheese buns.
The magic twist
Changing a few ingredients improves the nutritional quality of the recipe. The taste may be slightly different, but the muffins will be just as delicious.
In the magic twist recipe, we use avocado oil instead of butter and whole-wheat flour instead of white flour. Adding a little psyllium husk increases the fibre content. For cheese, you can use low-fat hard cheese.
Classic cheese muffins recipe
Ingredients for the classic cheese muffins
- 2 cups sifted pastry flour or 1 ¾ cups sifted all-purpose flour
- 3 ½ teaspoons baking powder
- 3 tablespoons granulated sugar
- ½ teaspoon salt
- ½ to 1 ½ cups grated extra sharp cheddar cheese (to taste, I use 1 ½ cups)
- 1 beaten egg
- 7/8 cup milk (15 to 16 tablespoons)
- 3 tablespoons melted butter
Step-by-step instructions
Step 1
Mix the dry ingredients. Add the grated cheese.
Step 2
In another bowl, mix the egg, the milk and the melted butter.
Step 3
Make a hollow in the dry ingredients and pour in the liquid mixture. Stir with a fork just enough to moisten the dry ingredients.
Step 4
Pour into muffin tins lined with parchment paper.
Bake for 18-20 minutes in preheated oven.

- 1 ¾ cups sifted whole wheat flour flour
- 2 tablespoons psyllium husks
- 3 ½ teaspoons baking powder
- 3 tablespoons granulated sugar
- ½ teaspoon salt
- ½ to 1 ½ cups grated extra sharp cheddar cheese (to taste, I use 1½cups)
- 1 beaten egg
- 7/8 cup skim milk (15 to 16 tablespoons)
- 3 tablespoons avocado oil
Step-by-step instructions
Step 1
Mix the dry ingredients. Add the grated cheese.
Step 2
In another bowl, mix the egg, the milk and the avocado oil.
Step 3
Make a hollow in the dry ingredients and pour in the liquid mixture. Stir with a fork just enough to moisten the dry ingredients.
Step 4
Pour into muffin tins lined with parchment paper.
Bake for 18-20 minutes in preheated oven.
Serve warm with butter.
